Rhubarb Marmalade
Ingredients:
  • 1 pound Washington Rhubarb

  • 1 lemon

  • 2½ cups sugar

  • Directions:
    Combine rhubarb, finely cut, with the thinly sliced rind of lemon (inner white part removed).  Add sugar and let stand overnight.  Add strained juice of lemon and cook until thick.  Yields approximately 36 ounces.

    We harvest Washington rhubarb from hothouses January through March and then hand cut from fields April through September.  The colorful plant is grown in our valley, in the shadow of Mt. Rainier.
