Rhubarb Peekaboo
Ingredients:
  • 1 lb. (4 cups) Washington Rhubarb

  • 1 cup sugar

  • 1 teaspoon grated rind of lemon

  • 1 package white cake mix

  • Directions:
    Mix cake as directed on package.  Pour batter into greased baking pan, 7½ x 12.  Top with diced unpeeled rhubarb and grated rind.  Sprinkle sugar over top.  Bake at 350°F for 40-45 minutes.  While it bakes, the rhubarb goes to the bottom, forming a sauce, and the cake rises to the top.  Sprinkle top of cake with powdered sugar.  Serve warm with cream.

    We harvest Washington rhubarb from hothouses January through March and then hand cut from fields April through September.  The colorful plant is grown in our valley, in the shadow of Mt. Rainier.
